Tasting Notes

colour

Bright crimson red. 

aroma

Ripe aromas of currants, damson plums and sweet spices. 

palate

A medium bodied wine bursting with juicy blackberries, cassis, prunes and ripe Damson plums. There is layer of warm mocha spice from oak ageing and soft, firm tannins add a savoury finish and characteristic regional structure.  

cellaring

This wine is ready to enjoy on release but will find further complexity over the next five years.

Technical

vintage

The 2019 vintage was atypically cool, leading to wines with pristine natural acidity and clean, bright flavours. Reduced yields as a result of the season led to wines with lifted aromatics and concentrated flavour profiles.

winemaking

The Shiraz and Cabernet Sauvignon were handled separately during winemaking with a range of techniques used, such as open-top fermentation for aeration, pre-fermentation cold soaking for improved colour and tannin extraction as well as post-fermentation maceration on skins. The two varietals were blended after maturation. The philosophy behind Ebony is purity; showcasing fruit richness, flavour and smooth, approachable tannins.

A consistent value-for-money offering from one of the best producers in Margaret River. A slightly leaner style to previous vintages, the result of this cooler vintage. Still, the fruit weight balance and all thing nice are in place to make for excellent current drinking.

Purple/black colour, a bouquet of wild boysenberries and tonka bean. Full-bodied, firm tannin, lively fruit flavours, cassis, prunes, mocha and thyme weave together as one. Good line and length, savoury finish. Great value.
