The 2023 season saw due a continuation of the La Nina weather patterns, with cooler weather and lots of rain prior to the growing season providing healthy vine growth. Cooler vintage temperatures produced fruit with vibrant natural acidity and more refined, delicate characteristics. Frost early on in the season caused some lower yields,
however the resulting fruit shows deliciously concentrated flavour.
Fruit was 100% hand picked and pressed directly to barrel for fermentation in largely older oak puncheons and barriques. Fermentation occurred spontaneously (wild fermentation) and there were no additives used during the fermentation process. Post-fermentation, the wine was matured for six months in barrel. Each barrel was then assessed and the most expressive ones were used in the final blend.

Chardonnay
Pan seared Spanish Mackerel with sweet peppers and thyme.
Light yellow colour. Fine, subtle and fairly straightforward chalky-mineral, creamy citrus aromas and flavours, tense and bright with fresh acidity and a cleansing finish. Good tension and line. This will reward a bit more cellar time.
