Bright crimson red.

Ripe aromas of currants, damson plums and sweet spices.
palate
A medium bodied wine bursting with juicy blackberries, cassis, prunes and ripe Damson plums. There is layer of warm mocha spice from oak ageing and soft, firm tannins add a savoury finish and characteristic regional structure.
cellaring
This wine is ready to enjoy on release but will find further complexity over the next five years.
Technical
vintage
The 2021 vintage was moderate, mild year. Rainfall in early January renewed canopies across the region and resulted in beautifully ripe, varietally pure wines that are brimming with perfect, delicate, natural acidity.
winemaking
The philosophy behind Ebony is purity: showcasing fruit richness, flavour and smooth, approachable tannins.
Fruit was cold soaked prior to fermentation to aid colour and tannin extraction.
Fermentation occurred in open-top fermenters, with plunging and pump-overs used for aeration and temperature control. Post-fermentation, wines underwent extended maceration on skins before being pressed to tank and barrel for maturation.
