Millbrook Winemaker Emma Gillespie showcases the great depth of fruit flavour, freshness and lively acidity that is unique to Sauvignon Blanc from the South West. This is a delicious, vibrant, tropical wine with bold flavours of juicy green apples, bright gooseberry and a refreshing citrus acidity. This isn't your classic SB either, 5% of this wine was also fermented in barrel, in homage to the elegant Fumé Blanc styles of the Loire in France.
Her passion for this variety has been rewarded with the wine receiving a Trophy for Best Sauvignon Blanc at the Wine Show of Western Australia 2023!
Tasting Notes

Clear, pale lemon with green hues.
aroma
The wine displays aromas of lifted passionfruit and gooseberry, framed with a delicate lemon blossom perfume and pastry crust notes.
palate
A dry, bright and refreshing wine that reveals crisp and vibrant lemon sherbet acidity with juicy flavours of green apple and lime. The palate is driven long and layered with a fine texture from a small portion of this wine that has undergone barrel fermentation.

Technical
vintage
We had a mild spring with adequate soil moisture, resulting in a slightly later season. A moderate summer led to ideal ripening conditions with little pressure in the vineyard and a lack of any major rain events during the ripening season. Consistently warm days and cool evenings made for great retention of acid within the grapes, whilst achieving optimal fruit expression.
winemaking
Parcels of Sauvignon Blanc were specifically selected for their unmistakable punchy varietal expression, whilst showing a perfect degree of freshness and vibrancy for which the Millbrook Regional Range is known for. The fruit was harvested in the cool of the night and transported to the winery for early morning processing.
The finest free-run juice was extracted early morning at the winery and underwent a cool tank fermentation to ensure purity and varietal expression. A small portion of this wine was barrel fermented in new oak, before being blended back to tank post-ferment. This oak portion makes up around 5% of the final blend.
