This delicious Western Australian sparkling wine was also awarded a Gold Medal at the Southern Forests & Valleys Wine Show 2023.

A complex and lifted nose. A unique combination of white peach, vanilla bean, toasted brioche and a hint of oyster shell.

palate

With a fine creamy mousse, this sparkling is fresh and zesty, delivering ripe melon flavours enhanced by the autolytic induced softness.

The wine exhibits generous acidity with a layered, complex mouthfeel, and delivers a rich, textural finish. A genuine bottle fermented sparkling wine suitable for all celebrations.

A cold, wet winter led into a cool spring – ideal conditions for fruit set and slow ripening. The Chardonnay from our Pemberton block is selected for The Yilgarn because it develops intense fruit flavours, whilst maintaining significant acid levels – crucial in the development of méthode traditionelle sparkling wines.

winemaking

The Yilgarn Blanc de Blancs has been produced using 100% handpicked Chardonnay from the estate vineyard in Pemberton. The wine was made using the ‘Traditional Methode’ of secondary fermentation in the bottle, followed by 36 months on yeast lees before being disgorged. This extended time on contact with its lees helped develop the secondary flavours that added great complexity and texture to the palate.

This is one of the best releases of this sparkling wine. It's made from 100% Chardonnay from down at Pemberton and prior to disgorging spent 24 months on lees in bottle. Has a light creamy mousse with a lifted fresh baked bread and lemony melon character. A light citrus tang lifts the palate through to a clean long finish.

Light-mid yellow with a creamy cordon of fine bubbles. Eggy/custard chardonnay aromas drive the bouquet. The palate is full and intense, with good depth and concentration, richness and amplitude, with a clean, dry balance and refreshing finish in spite of the considerable weight of the wine.

The wine spends 36 months on yeast lees. Made entirely from Chardonnay. It's squeaky and fresh-feeling, bright with nectarine and just ripe pineapple scents and flavours. It shows faint cashew nut savouriness and has a crisp, fine bead. As an aperitif style it's a decent drink.
